The ability of today's busy shopper to identify meat cuts can be helpful in understanding how to cook different cuts, and how to effectively compare their value with other cuts in the meat case.  The Uniform Retail Meat Identity Standards (URMIS), a labeling system developed by the meat industry, can help today's consumer quickly identify retail meat cuts, regardless of where they shop in the United States. Understanding the meaning of the information on a label is the first step in any consumer's meal planning, budgeting and cookery success.

 

Under the URMIS system, each retail meat cut label contains a three part name which identifies (1) the kind of meat (beef, pork, lamb o veal), (2) the primal (or wholesale) cut name, and (3) the retail or consumer name.
