Twice Baked Potatoes
Not as hard to make as you think. |

Cook: 1 to 1-1/2 hours

baking potatoes, washed and dried |
| 4 |
Tbsp. butter |
| 4-5 |
Tbsp. milk |
| 1/4 |
tsp. salt |
| dash |
pepper |
| 2 |
Tbsp. chives, chopped (optional) |
| 2 |
Tbsp. grated cheddar cheese (optional) |
| 2 |
Tbsp. bacon bits (optional) |
| 2 |
Tbsp. sour cream (optional) |

Pierce potatoes several times with fork and bake in 375°F oven for 1 to 1-1/2 hours (or 7-10 minutes in microwave oven). |

To test for doneness, squeeze. If potato gives and feels soft, it is done. |

With knife, cut off top 1/4 of potato and using a spoon remove pulp, placing pulp in bowl. To pulp add butter, milk and salt and pepper. Add any, or all, of the optional ingredients as desired. Mix well. |

Refill potato shells with pulp mixture. If desired, place under broiler for 2-3 minutes to brown. Serve piping hot. |
