Overnight Coleslaw
This is a great "do ahead" recipe for a barbeque or picnic.
 
Prep: 30 minutes
Refrigerate: Overnight
Servings: Serves 8

12 cups shredded green cabbage
1 green bell pepper, chopped
1 red bell pepper, chopped
1 medium red onion, chopped
2 carrots, chopped
1 cup sugar
2 tsp. sugar
1 tsp. dry mustard
1 tsp. celery seed
1 tsp. salt
1 cup vinegar
3/4 cup vegetable oil

 
Overnight Coleslaw
 
Combine all the vegetables and sprinkle with 1 cup of the sugar.
Combine remaining 2 tsp. sugar and all remaining ingredients in a saucepan. Bring to a boil, stirring occasionally. Remove from heat and pour over vegetables.
Stir to coat vegetables well. Cover and refrigerate overnight.
Serve cold.
 
  • This salad will store well for several days.
  • Makes a great accompaniment to any of our barbecue recipes.
