Easy Beef & Salsa Burritos
Prepared salsa, frozen spinach and ready-shredded cheese help make this meal in only 25 minutes.
 
Prep: 10 minutes
Cook: 15 minutes
Servings: Makes 8 burritos

1 lb. lean ground beef
1 Tbsp. chili powder
1/4 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. pepper
1 pkg. (10 ounce) frozen chopped spinach, defrosted and well drained
1 cup prepared chunky salsa
3/4 cup shredded Co-Jack cheese
8 medium flour tortillas, warmed

 
Easy Beef & Salsa Burritos
 
In large nonstick skillet, brown ground beef over medium heat 8-10 minutes or until beef is no longer pink.
Pour off drippings. Season beef with chili powder, cumin, salt and pepper.
Stir in spinach and salsa. Heat through.
Remove from heat and stir in cheese.
To serve, spoon 1/2-cup beef mixture in center of each tortilla. Fold bottom edge up over filling. Fold sides to center, overlapping edges.
 
  • Make this even quicker by substituting cooked shredded beef for the ground beef.
