Apricot Almond Chutney
Cook your favorite steak and serve with this sauce to impress your most discerning guests.
 
Prep: 1 hour
Cook: 30 minutes

11 ounces dried apricots, diced
1-1/4 cups boiling water
1 cup light brown sugar
2 small onions, thinly sliced
1 tsp. ground ginger
1 cup red wine vinegar
2 Tbsp. cilantro, chopped
2 cloves garlic, chopped
1/4 tsp. salt
1 cup blanched, sliced almonds, toasted, chopped

 
Apricot Almond Chutney
 
Pour boiling water over apricots and soak for 1 hour. Drain the apricots, reserving liquid.
Reduce the soaking liquid in a saucepan until 2 Tbsp. remain.
Combine the apricots, reduced liquid and remaining ingredients except the almonds.
Bring to a boil. Simmer 30 minutes, stirring occasionally.
Remove from heat and stir in almonds.
